Black Mushroom Rice w/Shrimp & Crawfish

Haitian Épis
1 bunch of scallions
1 bunch of flat leaves Italian parsley
1 onion
4 heads of garlic
1 red and yellow bell peppers
2 springs of thyme
1 celery stick
Instructions
Step 1
Clean all vegetables, remove peel from garlic and scallions, remove seed and stem from bell peppers
Step 2
Roughly chopped vegetables, add to food processor with a little olive oil, and pulse
Step 3
Remove from food processor, add to the jar and refrigerate after each use.
Black Mushroom Rice w/Shrimp & Crawfish Ingredients
2 cups of dry black mushrooms (DjonDjon)
3 garlic cloves minced
4 tablespoons olive oil
1 tablespoon of Haitian Épis
3 cups Jasmine rice
2 teaspoons salt
1 tsp Ground cloves
1 12oz bag of green peas and sweet corn
1 bouquet garni
1 green Scotch bonnet pepper
1 lb of peeled and deveined shrimp
1 lb of precooked crawfish tails meat
Instructions
Step 1
In a small pot, soak mushrooms in 4 cups of water for 10 minutes.
Step 2
Boil mushrooms on low heat for 10 minutes.
Step 3
Strain the mushroom water into another container for later use. The mushrooms in the strainer will no longer be needed.
Step 4
In a large pot, sauté the garlic and Haitian Épis on medium heat for 2 minutes.
Add your clean shrimp, season with salt and pepper, and cook them 2-3 minutes per side. Set aside in a bowl. Add your crawfish cook for 3 minutes add in the same bowl with shrimp.
Also, cook green peas and sweet corn for 3-5minutes and set them aside in a bowl
Step 5
Add the mushroom water, salt, cloves, bouquet garni, and Scotch bonnet pepper
Step 6
Bring water to a boil and add rice after rinsing under cool water (rinse about 3 times)
Step 7
Bring the water to a boil and reduce the heat, when most of the water evaporates (approximately 10-15 min).
Step 8
Stir the rice, set the temperature to low.
Step 9
Cover the pot and steam the rice for 15 min.
Step 10
Scoop rice into a bowl. Add the desired amount of peas, sweet corn alongside shrimp and crawfish and garnish with your favorite garnish
Serve immediately
