Deep Routes x The Global Taste
Deep Routes is an educational project that aims to celebrate the food traditions of African and Indigenous diasporas. As part of this project, Deep Routes launched An Manje: A Celebration of Haitian Foodways initiative which is multimedia anthology that includes written and video essays, interviews, recipes, and artwork, all of which highlight the culinary histories of Ayiti/Haiti culinary histories and future visions by Haitian and Haitian-American authors, chefs/cooks, creatives, and more.

We were honored to be a part of this great initiative to celebrate Haiti and it’s food traditions. We launched unscripted mini-doc series to called : An Manje : The Culinary Flight to Haiti in honor to celebrate Haitian food traditions.

Diri ak Djon Djon known in English as black rice is a culinary fixture within Haitian gastronomy. This particular mushroom is found all over Haiti, particularly in the northern region of Haiti. It is known as a delicacy and is often served on Sunday dinners, or on special occasions. Chef Maelle’s Black Mushroom Rice with Shrimp and Crawfish dish is an ode to her homeland of Haiti with a twist.
